A new (at least to me) stand appeared selling organic greens for salads. They are grown at a farm in Western Illinois (I can't remember their name). They have about 10 different kinds of pristine looking greens in large plastic bins. You buy either an $8 or $12 dollar size. Each size represents a bowl that they have and they fill the bowl to your specifications in terms of mix. They have several kinds of lettuces, kale, chard, arugula, etc. I tasted sorel for what may be the first time and loved its lemony bite. Once they fill their bowl, they empty it into a plastic bag for you to carry away. No dressings or anything like that; all you get are the greens. The $8 dollar size I got looks like it will make a large dinner salad for one, or feed a bunch as a side salad.
At $8 it's pricey, but worth it to me. I love eating a salad that has a mixture of different greens. At the Evanston farmer's market I get bags put together by different stands. Since this bag of greens plus one or two toppings will be my dinner, it's reasonable, at least to me.
I hope they do well as they seem young and enthusiastic.
