A couple of weeks ago I went to Joong Boo Market on Kimball and realized that one of my classmates works there. After chatting for a minute or two, she stuffed my bag with these:

I am totally not a vegetable dumpling kind of gal but a friend suggested I cook these in some broth and make something nice and hearty. I am wondering if anyone's got any Korean inspired recipes or just even ideas that they can share so I can do something different because I can't come up with much on how to go about preparing these.
Also, anyone know where to get some wide rice noodles in the Logan Square or Albany Park neighborhood? Or at least suggest to me something similar that Joong Boo carries. Thanks.
