I pretended that today was winter. ( 65 degrees on Dec 2 ??? ) I love stew in the winter. The long slow cooking that makes the house smell so good. The melding of flavors that only occurs in a stew. Every cuisine has its stew. Cajan, Greek, Mexican and of course French are my favorites.
Tonight was a Greek base. Beef, potatoes, white onions, tomato paste, seasoned with allspice, bay leaves, salt, pepper, cinnamon stick, a touch of red wine vinegar and finished with Kalamata olives and feta cheese.
