I received Ferran Adria's "The Family Meal" for xmas, and his Romesco sauce uses 5 cups if Choricero pepper paste per gallon and a half of sauce. Has anyone ever seen this?
I understand it's best known as the pepper that gives chorizo its color, but I've never seen this paste except for mail order.
What is patriotism, but the love of good things we ate in our childhood?
