    I'm looking for chocolate pate a glacer to make homemade ho ho's from the bouchon bakery cookbook. Any ideas for where to buy in Chicago? Thanks!

    I wasn't able to find anywhere locally to get this that wasn't in restaurant-size quantities. However, I found the dark chocolate glaze in this recipe here to be a very good substitute, if you're interested.

    rose levy beranbaum has a chocolate lacquer glaze that would also work. it's in 'rose's heavenly cakes'. probably on her website as well.

    I used that to make the oh-oh's and it was awesome.

    You can get a ton of the fancy stuff at l'epicerie (it's the place the cookbook suggests).
