    Hello all,
    Have several relatives coming over tomorrow, rents asked me to cook.

    I have made ceviche with costco fish, halibut in the past. Cut fish up into bite size pieces, cover in fresh squeezed lime juice, cover that with chopped onions, and into the fridge for 4 hours. then add cut veggies and u know the drill
    Looks really cool if u take cognac glasses, add all the chopped veggies in individual layers, and then the "cooked" fish on top

    Last time I cooked with their shrimp, i noticed they were quite fresh.

    My question. I picked up a 4 pound bag, of still frozen shrimp. Will toss them in the fridge tonight to let them thaw out, and give the water a place to drain.
    then first thing in the morning, take the "skin" off, then dump them in the juice.
    probably gonna slice them in half, then chop them up into bight size pieces, as these things are huge

    So question is, am I going to get everyone sick?

    As I got 3 packs of halibut, planning on putting half a pound halibut mixed in with a pound/ 1.5 of shrimp for the halibut
    so the menu will be:
    Cold
    -shrimp ceviche
    -gazpacho
    Warm
    Blackened halibut tacos, with cabbage and kohlrabi cole slaw
    lime grilled shrimp with mango guac
    desert
    flan

    Fear not. As long as they defrost properly and have no off smell you will be fine. As covered on towards the bottom of this thread-

    You are asking a question for which there is no definitive answer.

    The only shrimp I consume raw or as a ceviche are the little shrimp sold at Mitsuwa for raw consumption or at a Sushi Bar from a Chef I trust.
    We usually eat only Texas sourced frozen shrimp, but not uncooked.
    Grash's in Milwaukee has Jumbo fresh Florida shrimp but the cost is usually $30/#. When I want to have spectacular shrimp cocktails, these are the shrimp I use.

    Eating uncooked shrimp from any source such as COSTCO is a little like playing craps, you have to know the odds and ask, " Do I feel lucky?"

    Did nobody else notice that the expiration date for the shrimp appears to be 2012. Or did you all just assume it was a Costco typo?

    I assumed that was the reason for the question about the risk of making people sick.

    From Ask.com and many other sources:

    How long can cooked shrimp be kept in the freezer?
    That depends on the freezer and how well the shrimp is packaged. It could keep from 6 months to a year.


    At this point we're looking at a year and 2 or 3 months. If it doesn't make you sick, I figure it will, for sure, taste 'off'. I'd toss it. And certainly not use it for ceviche.

    that was a random picture of costco shrimp i found online

    Everything turned out great, I ended up having to boil some water, and toss the shrimp in there for 45 seconds- a minute because I put them in the lime juice a little too late, ill post pics of it all soon

    oh, and good news, nobody got sick!
