    NorthShore meats in Wilmette carries andouille sausage in their freezer case. It is made locally in Chicago at a sausage factory. The maker's name slips me but they knew all about it. It is pretty good without having to do mail order or make a road trip down to LA.
    What disease did cured ham actually have?

    Do they make "cajun andouille", or is it "French andouille"?

    Gepperth's Meat Market on Halsted just south of Armitage sells a cajun andouille. My understanding is that they make the sausage in-house and send it out to be smoked. I would call before going as they occasionally run out before the next batch comes back from the smokehouse.

    I'm not sure if they send them to an outside company for smoking or if they have their own smokehouse located off-site. A long time ago I went in looking for some andouille but they were out, the person at the counter said that they had sent a batch out to be smoked and should have it back the next day. This was 10-12 years ago so things may have changed since then (or I could be completely mis-remembering the conversation).

    The Laplace, LA sausage makers make andouille with small chunks of smoked pork butt. The sausages are then smoked again. I doubt that anyone in the Chicago area makes this type of andouille.

    We used the sausage for our cajun jambalaya.
