    While picking up some very good Sicilian sausage from Caputo's I noticed chorizo.
    An quick inquiry conformed that it was made in house so, curiosity piqued, I grabbed a link to try it.

    And now I have no idea what to do with it.

    I'd like to do something simple and I'm thinking of frying it in olive oil with some potatoes and peppers. Maybe some crusty bread and glass or three of rose...

    Thoughts? Suggestions?

    Hi,

    I make this a few times a year: Braised Cabbage with Tomatoes, Potatoes and Chorizo.

    Not from Caputo's but here's what I just did with mine, and I frequently do this:

    Get some hash browns going
    When they are about halfway done, add your chorizo to the pan
    Let the chorizo release it's "essence" (aka greeze) onto the taters
    Get them both crispy, and remove
    Put some tortillas in the same pan, heat them up in the "essence"
    Remove the tortillas, place the potato/ chorizo goodness on top of the tortillas
    Get some eggs going in the pan now. I do "over medium" (just no runny whites)
    A few sec before the eggs are done, put some of your favorite salsa in the pan to get warm
    Slide the eggs and salsa over the plated tortillas and chorizo/potato mix.
    Eat it Indian style - pinch a piece of tortilla off, and then use that tortilla piece to pinch up some egg/potato/chorizo
    Do yard work until about noon.
    Repeat every Sunday until July
    If you have no yard work to do, pm me, and I can get you an address to a house that needs yard work done every Sunday.
