I really enjoy the Torshi at Larsa's and looking at the recent pictures from Mr. Falafel certainly makes me want to give theirs a try as well. I would like to try making some. Does anyone have a good, relatively simple, recipe for a tumeric Torshi? I have looked at recipes on the web and some of them call for what seems like some fairly obscure ingredients and others appear to be more or less a standard pickle and don't include Tumeric. It appears that regional differences make a huge difference with regard to this dish.

I'm could piece together something on my own to approximate what I am looking for, but I thought I would check to see if someone has a recipe they would be willing to share.

I was expecting to be able to help but, to my surprise, most of my Balkan cookbooks (of varying nationalities) were little help as were both my Greek and Turkish books. I did find a bunch of recipes in one of my Persian cookbooks but, sad to say, not one of them included turmeric. Sorry I struck out....

Thanks for trying. Sounds like you put some effort into it.

There's a recipe, I think, in Nawal Nasrallah's Iraqi cookbook. I have loaned it to a friend, but I will try to get in touch and see if it has the pertinent information.

I have not made this recipe, it looks to be similar to Mr. Falafel's torshi.

I'd guess Sahar Grocery has amba spice mix, if not you can certainly find it at one of the groceries on Devon.

Thanks! I think this nails it. I will be swinging by Devon for some Amchur/Amchoor.

Was at The Spice House today, checked and they carry Amchoor, aka dry powdered unripe green mango. But, and here is where it gets a little confusing, the amba spice mix called for in the recipe is not simply straight mango, but a mix of spices.

I'm going to try the torshi recipe soon and plan on using amchoor combined with the alternate spice mix suggested in the recipe. Or, maybe I'll just use garam masala with a little amchoor and call it a day. OR....................

I did not detect strong spicing in the torshi at Mr. Falafel, I think as long as one does not get carried away the linked recipe will be similar.

I used Roni's Hazmutzin recipe linked to above. In the recipe she says that she sometimes uses a mixture of mustard seed, chili powder, paprika and cumin instead of amchoor. While I was looking through our spices to put some of this alternate mixture together, I noticed we had some Baharat from the Spice House.

I'm sure it was a misuse of this spice mixture, but I decided to give this a try instead of heading out to pick up some amchoor. I also threw in some extra chili powder. I liked the way it came out. It was both a bit sweeter and a bit spicier than Larsa's version. I guess it will get better with some additional time.
