    How about some info on what makes the deep-dish apple pie at Flo legendary, what is so motivating about Flo's pie that makes you want the recipe?

    I've never been a particular fan of Flo so I'd be interested in what other dishes you enjoy there, or is it only the pie.

    ...there was a restaurant called Flo's on Randolph between State and Dearborn, closed in the '70s, that used to serve the apple pie in question. An older acquaintance of mine told me about it & asked if I'd try to find the recipe for her, as in her memory, it was pretty darn good deep dish apple pie. I'm hoping to track down the recipe for Shirley, and, out of personal curiosity, to see how the recipe tests compared with other deep-dish apple pie recipes I have. The people at the Flo on Chicago aren't connected with the older spot...happy to hear if you know more

    I worked there as a waitress in the 60's. It was a wonderful job supporting me through college. Flo's served many pies, cannot remember the count. Apple, blueberry, cherry, gooseberry, and more. The pies were baked in ovens at the front of the restaurant, and served in a bowl, ala mode if you chose. I expect that the special ovens created a better pie. They entered the oven frozen. They were not made (assembled) in the restaurant. I've no idea who manufactured the pies. They were all very good. Gooseberry was my favorite. Sara Lee outlet stores sells large commercial frozen pies, you might want to give their apple a try. At times the Jewel will carry Sara Lee deep dish pies. Good luck.
