Cooking Classes - Southern/Western Europe?

Hi,

I am in the process of planning a trip with my sister in September - we have it narrowed down to a not-very-narrow area, and are thinking of choosing our destination based on the availability of good cooking classes. Has anyone had a recent great experience (or heard of one) in France, Portugal, Spain, or Italy? Utter extravagance is out of our price range, but we have some flexibility in terms of budget. Please help us focus, we want to go everywhere and eat everything.
