    As I grow ever more middle-aged, I am having to adjust how I do things. The thing I am trying to improve right now is figuring out how to cook wearing a thumb brace on my hands [to compensate for arthritis] and wear gloves over my hands to keep the brace clean. I guess this is mostly a knife use question. Maybe the answer is using the Cusinart more but I like to control my own cutting.

    Regular ol' plastic gloves make my hands sweaty, slippery messes. Ditto rubber gloves.

    Is there plastic that breathes that I can buy? Should I just get inexpensive cotton gloves and wash them?

    On a different note, have you though about trying an Alaskan Ulu? Or even a two handed Italian mezzaluna. Might be easier for you to use.
