Post #1 - December 26th, 2019, 3:08 pmHappy New Year - almost! In "Cooking For Good Times", Paul Kahan's new cookbook, he states "Here in Chicago, sea bass comes in on Wednesdays. It all goes to one distributor, and then it gets sold to a major grocery chain in the city. So I go straight to the source on Wednesdays."
Does anybody know the distributor or the major grocery chain? My first guess on distributor was Boston Fish Company, but it's only a guess... I don't recall ever seeing sea bass from Greece in Jewel, so I suppose it could be Mariano's, [but I don't shop there, so IDK]

It would appear to be Fortune Fish.
I also checked Supreme Lobster, too, who had a Bass but not Sea Bass.

Post #4 - December 28th, 2019, 11:54 amI suspect it is Whole Foods. The only chains Fortune sells to in the Chicago area are Sunset, Whole Foods, Pete's and Valli. They do not sell to Jewel or Mariano's
