I just bought the new Alford/Duguid Cookbook/travelogue: Mangoes & Curry Leaves : Culinary Travels Through the Great Subcontinent (Hardcover)
by Jeffrey Alford, Naomi Duguid
It is a beautiful book filled with recipes from India, Tibet and Nepal (most are vegetarian). I haven't tried any recipes from it but I use one of their other books (Hot Salty Sour Sweet).

I also love Suvir Saran's book--Indian Home Cooking--but it's only about 2/3 vegetarian. It's very practical--the recipes are pretty straightforward and many of them can be made fairly quickly.
