Though I've mentioned it a couple times in the past, I thought I'd share one of the top five most requested weeknight dinners in my household: Al-Kaymeh lavosh with stuff on top.
We keep their large lavosh in our freezer at all times, buying them straight from the source on Kedzie and freezing them as quickly as possible. They thaw quickly and surprisingly well.
After a long day of work, it is generally pretty easy to top with some simple tomato sauce (also from the freezer) and any fresh ingredients that are on hand.
The most recent meal was chopped zucchini and onion with grated domestic parmesean (foreground), and mild Italian sausage (made at Tony's market on Elston) with crimini mushrooms and sweet onion, no cheese (background). The onion in the background is not sauteed or carmelized, but added to the oven raw because I like the crunch and the bright flavor of the almost raw onion with the sausage.
These go into a 475 oven for about 8 minutes. Open a bottle of wine and possibly some greens with oil and vinegar and you've got a pretty satisfying weeknight meal.
