I first came across this wonderful piece of encased meat in Bayfield, Wisconsin, located on Lake Superior and the gateway to the Apostle Islands National Lakeshore. Bayfield is a great summer destination for anyone looking to take a trip this summer, I would reccomend this fun little town although it is about an 8 hour drive the reward is great food stop's, great local craft brews throughout the state, a scenic route when you get upstate Wisconsin, the wonderful town of Madeline Island (fully functioning town on an island with a population of 2,000 during summer only accessible by ferry) and a trip to the Apostle Islands, land of eagle, bear and original home of the Ojibwa people.

Now back to the sausage, I picked up some whitefish and scallop sausage today at whole foods and grilled it for dinner and it turned out to be very tasty and alot less fuss not having to worry about overcooking the fish on the grill. While it was very appetizing and quite the conversation starter it wasnt cheap it ran $9.99/LB or about $3.25 a piece. Does anybody know of any other suppliers of this in the area, Id like to add it to my regular 'que sessions but at that price I wont be eating it weekly.
