    I started thinking about making Ice Cream Sandwiches for this weekend's neighborhood Block Party. Cold, frozen treats on a steamy day. Sounds good, huh?

    This might be a stupid question, but is there anything different I should do to the cookies in order for them to freeze well, ie. getting soggy? I'm already daydreaming about the combinations— (Sweet Occasions ice cream) with homemade cookies (ginger?, peanut butter?, mocha espresso?, chocolate mint?).

    They are so good that everyone has been asking me to just make the cookies and forget about the ice cream. They do use some special KA ingredients, but I would urge you to give these a try. Soft and chewy and so delicious, even when frozen.

    I added Heathbar pieces (not chocolate covered) instead of nuts.

    Have you seen the recipe for ice-cream sandwich candy pie that's making the rounds? Definitely over the top!
