    Baby backs have been my main rib for smoking. I like the Costco baby backs for their meatiness & price. I've smoked spare ribs a couple of times. I'm a fan of the spares but the wife doesn't like the gristle, cartilage & such.

    I'd like to try the St. Louis cut spares. Seems like the best of both worlds. Spare rib flavor with the neatness of baby backs.

    Anyone know where I can procure some? Or should I just suck it up & trim the spares myself? I guess I could make rib tips, then.

    I always see them at moo and oink. I go to the one on 183rd street, but I would expect you could find them at the city locations as well

    St.Louis ribs are $2.59 a lb. at Moo & Oink this week ! Besides getting a good deal on ribs LTH folks can put their writing and photographic talents to work.

    Tony's on Elston had them last week for 1.99/lb. I've only smoked Baby Back, but the less expensive price tag has almost pushed me to move up to spares.

    Though I suggest explaining they want the spare ribs trimmed Saint Louis style as, at least with a couple of the Peoria Packing butchers, the default is trim the tip section then zip the rack down the middle length wise, a popular request among Hispanics.

    My suggestion to the OP, go to Peoria Packing for spare ribs then follow DBiggs Saint Louis link and trim them yourself.
