    If it's Yukon River salmon, it is indeed delicious, even fattier than Copper River. But reports are that the run is weak this year.

    Copper river was $16/# at Fresh Farms yesterday and i purchased a side. I have had great success with the quality of the filleted fish at Fresh Farms. Whether or not it was actually from the Copper river area is anyone's guess.-Dick

    I saw it there this weekend, too. You do wonder about the authenticity but I must say, of the three or four other decent varieties they had at the time, the Copper River-marked looked by far the best. If I wasn't on a pork mission right then, I'd have loved to pick up a fillet. Some of those softshells, too.

    Soft shells looked good also but weren't moving. I am reluctant to purchase unless I see some movement. Purchased 18 from Fresh Farms a couple of weeks ago that were superb.
    I asked for a new flat to be brought out and they did.
    More and more Fresh Farms is my 'go to' place for fresh fish.
    Picked up turbot, cod, clams and sashimi grade tuna along with the Copper river salmon.-Dick

    I guess all kind of things can come out of CRS....
    This little bugger came out of one section of CRS from Costco that I cooked tonight

    I had a look (over my old slide light table) looking for anymore friends of his (hers?)
    none to be found so we cooked the fish (maybe a bit more than usual...)

    Mhill, is that possibly a bait worm? Hard to tell since there's no size comparison. I don't see segments, though...and it's too red to be a leech...

    Your imagination is incorrect.
    Copper River is an appellation that can be applied to any salmon caught in a widely designated area outside of the mouth of the Copper River. There are many different runs of the different Salmon species in the area at various times that qualify as Copper River.

    The Copper River I have purchased at Fresh Farms this year at various times was all Sockeye, there was no Copper River King available at Fresh Farms, King, yes, but no Copper River King.
    It was all fresh.
    Just had some that i poached with dill last night. Excellent as Sockeye is my favorite but Sockeye is denser than King.-Dick

    Saturday May 26, all Sunset Foods are bringing in whole Copper River salmon. They will cut to order. A tent sale.
    Get a second mortgage & bring your 1st born for payment.
    They say $ 30-35 per lb.
    Whole Foods next week, as least in Deerfield. Same cost & forms of payment.
    They are both $%^ NUTS !!!!!!!!!!!!!!!!!!

    Costco in Mettawa is supposed to get a supply on
    Tuesday, 5-22. Should be reasonable.
    Got some there last yr. Tasted great.

    Copper River pricing is due to successful marketing and early season.
    It's completely out of hand as others have alluded to.
    Wait, prices will fall, purchase at lowest prices, freeze. If you need salmon now, Sam's farmed from Norway is good, I don't purchase the Chilean. Fresh Farms farmed Scottish has been good but who knows where it actually comes from.
    Samon from New Zealand has started showing uo but I haven't tried any.
    As for the Copper River, I dpn't plan on purchasing any until it's less than $15/#, hopefully way less when they have to off load it!-Dick

    I'm hoping & guessing Costco will be 1/2 of that or better.Bought there last yr. They get 2-3 shippments & that's it.
    Was delicious last yr. Anticipating the same.
    Down side you buy 3-4 halves. Wrap it good & freeze.
    Will be just as good.

    Snagged 3# of CRS from this Mariano's store yesterday for Memorial Day family gathering, on sale at $14.99/lb. Grill was inoperable so basted with Iron Chef Sesame Ginger sauce & a little sea salt. Baked skin side down at 375 degrees for 20 minutes, then broiled on high for 5-7 minutes until caramelization just started to occur. Took out, sprinkled with chopped scallions & a squeeze of lemon, and served it up piping hot. What a fish! Dense & flavorful. Leftovers with some wokked veggies tonight.

    Copper River was $12.99 yesterday at Fresh Farms in Niles. Light brine, grill with lump and a bit of cherry wood, so damn rich and delicious I chuckled at first bite. Corn, watermelon, salad with fresh radish and bialy croutons, a memorable Memorial Day.

    I was scrambling to find copper river salmon today. Whole foods in lincoln park didnt have it, neither did treasure island.. I don't have a costco card BUT they do have it (the lincoln park one). I did find it at Dominick's at Foster/Sheridan for $8.99/lb and they said they had boxes of it. Got 2lbs yay looked really nice. Going to grill up some tonight :)

    Costco, Mettawa, 6-12. $ 10.99. Season wineding down.
    The also had FRESH Halibut fillets. Delicious!!!!
