“I know it’s a BBQ restaurant,” Chef Charlie McKenna mentioned last night, off-handedly,
at Lillie’s Q, “but the best dish on the menu is Shrimp n’ Grits."
The Wife thought them “miraculous,” and she is not often given to overstatement.
Shrimp n' grits in background; Low Country Boil in foreground.I think I still prefer The Wife's version and not just for political reasons, but because I appreciate her relatively heavy use of bacon (pigmeat and shrimp were made for each other). I don’t believe bacon was included in the Lillie’s Q rendition (our server said there wasn't, though I thought there might be a little...at least some bacon fat). Still, SnG at Lillie’s is probably my favorite restaurant version of this dish.
