    Well, a little late, but here's what it was: Baby arugula, mache, and thinly sliced red onion, tossed with a simple homemade red wine vinaigrette. Take a small log of goat cheese, drizzle with extra virgin olive oil and sprinkle with Borsani herb salt - slice and place under the broiler for a few minutes. Divide salad among 2 plates and top each with half of the goat cheese. I served the salad with small whole wheat rolls from A&G grocery - brushed with olive oil, sprinkled with Penzey's garlic salt and placed under the broiler to toast. Mmm...Summer. :)

    First, I put pasta water on to boil. Then, I fried up two sweet and one hot italian sausages (out of the casings) and set them aside. After that, I sauteed sliced fennel in the sausage grease, adding a splash of wine and/or pasta water, until tender. Finally, I added cooked pasta and sausage back into the pot with the fennel and cooked for a few more minutes.

    Served with tomato & cucumber salad on the side. I like to serve the pasta with grated peccorino on top, but that may be too much of a savory explosion for some.

    It's more of a fall/winter recipe, really, but so good.

    I made a pesto with the ridiculous amount of basil my deck is producing (this is the 4th pesto of the season) served on bow-tie pasta. Marinated some chicken breast in olive oil, balsamic, garlic, garden basil and rosemary, dried thyme and oregano, salt and grilled it. Sliced it up to serve over the pasta.

    As a side we had quartered campari tomatoes.

    Delicious and very easy.

    Tonight we are taking a picnic to the final concert on the square here in Madison.

    I am taking ingredients for made on the spot sandwiches, bread, ham, cheddar, tomatoes, and lettuce and a salad of fresh mozzarella, green beans, tomatoes, basil, oil and vinegar. We are meeting some friends who are bringing some sort of chip and dip and a dessert. Should be a nice evening, other than all of the sweating.

    by wednesday nigght all the fresh ingredients purchased over the weekend are gone. SO tonight is grilled cheese and turkey, some bean and bacon soup, and some chips. Pretty boring.

    Tomorrow is pizza night, thin crust, sausage and mushroom not from a chain of course.

    (will grill some marinated chicken breasts over leftover coals for lunches later this week)

    Whole wheat fusilli pasta with some sauteed zucchini, red onion, garlic a touch of olive oil, splash of pasta water to bring the sauce together, topped with some toasted pine nuts. Grate some grana padano over the top and you are good to go.

    Needing a break from poultry in order to enjoy our Thanksgiving turkey, my daughter and I hit Fish Market fish market in Vernon, CT this past weekend and scored 25 Rhode Island quahog clams (about 4" across) for $7.00. Cooking them last night, the secret to the delicious broth-based chowder we had this summer (at Abbott's Lobster Pound in Noank, CT) was revealed. Quahogs yield an unbelievable amount of rich, thick broth per clam. Though I had added a good bit of water to the pot I steamed them in, the broth needed no reduction to be called a soup. I added nothing but a few sauteed shallots and some diced cooked potatoes. The meat of the clam itself was as tender as any littleneck I've had.

    Fish Market is located less than 1/4 mile from the Boston-Hartford-New York route, I-84 and serves a fresh-not-frozen lobster roll for $5.99 at lunch. Selection of fresh fish varies and is widest on weekends. They also do a nice meat business.

    last night was leftovers from the weekend.

    A nice big rueben sandwich on dark rye, and a big bowl of crawfish bisque I made on Sunday.

    Hi,

    You might just want to reread this thread you initiated for inspiration.

    What do you have in your refrigerator? You can google all those ingredients to find a recipe using what you already have.

    The Mrs. (PBandFluff) is having a group of ladies over for their monthly Bunko game night. I personally think that it is just an opportunity for them to get away from their husbands and have a few cocktails. With this being the last time they meet until the fall, we are making a few more items than normal:

    1. Onion Dip with Caramelized Vidalia Onions, cayenne, sour cream, cream cheese and mayo
    2. Cold sesame peanut noodles with matchstick cucumbers, bean sprouts and toasted sesame seeds
    3. Southwestern Black Bean and Corn Salsa with red onions, red peppers, lime juice, cilantro and parsley
    4. Ham, mozzarella, spinach, roasted red pepper pannini's
    5. Apricot Shortbread bars
    6. Brownie trifle with chocolate pudding, whipped cream and toffee pieces
    7. Sangria with oranges, grapes, pears, peaches, apples, plums
    8. Caipirinha's

    Doesn't look like I will need to have dinner tonight :shock:

    Im just doing burgers tonight(unless I see something better @ the butcher), brined chicken tomorrow, BB ribs Sunday, and corned beef and cabbage Monday.

    The porterhouse selection today at Jewel (yea I know...) was poor so I'm got a strip for me and the 13 year-old and a FM for my wife....

    Memorial Day: Dragon Turds, Armadillo Eggs, Fauxstromi, Marinated Skirt Steak...all on the smoker. My son told me he has had his fill of meat for a couple of days! :D If anyone hasn't tried skirt steak on the smoker, I was amazed how well it turned out.

    I'm doing a little pub style chicken curry tonight. Potatoes, onions, carrots, chicken thighs, lots of yellow commercial curry powder and a little chicken stock left to simmer for an hour or so.

    When served over rice, it makes agreat accompaniment to a Bass Ale.

    Tonight was ravioli (frozen, from Costco) with home made tomato sauce
    (pulled from the freezer)
    salad (lettuce, carrots, red pepper, cucumber, tomato)

    it was one of those days :)

    Last night: big pot of homemade lentil, bean and smoked pork neck soup and a loaf of homemade rustic bread. Not too many soup days left until fall...
