There's also Boelter... I haven't been to the Chicago location so I'm not sure, but I recall seeing Cambros at the Milwaukee location awhile back.

Restaurant Depot* is industry, Boelter is open to the public and the Boelter brick and mortar store on Division is large, clean, friendly, somewhat upscale and well stocked with everything from deck ovens to flatware and cambro containers.
