    This live poultry market has been open for several months on 26th Street west of Wentworth next to Ricobene's. They offer several different types of fowl: guinea fowl, silky chicken, turkey, young geese, etc. Has anyone tried this place?

    How does one select a bird? I've noticed older ladies squeezing the breasts and feeling the behind. What does one feel for?

    I'd guess these older ladies were checking to see how meaty the bird was and how young and resilient the meat and bones were. I was watching Julia Child the other day, and when assessing a bird (goose, as it happened) she also wiggled the little cartiligenous piece of the breast bone right near the neck -- as I recall, she mentioned that is shouldn't be too stiff (a sign of an old bird, I think).
