I'd guess these older ladies were checking to see how meaty the bird was and how young and resilient the meat and bones were. I was watching Julia Child the other day, and when assessing a bird (goose, as it happened) she also wiggled the little cartiligenous piece of the breast bone right near the neck -- as I recall, she mentioned that is shouldn't be too stiff (a sign of an old bird, I think).
