the other day while shopping, i picked up a package of hot links to tide me over during my sunday 'smoke', when the bold listing of pork, chicken and beef by products, caught my eye....

upon close reading of the ingredient list, i noticed the descriptor - beef salivary glands.

what the hey... i thought this kind of added meat slurry, lost commercial practice since upton sinclair's day.

My favorite food ingredient has been "partially de-fatted beef fatty tissue" in Armour Potted Meat Food Product. But Pork Spleen in a neon pink hot dog isn't far behind, nor is your salivary gland...

Whenever I hear someone making horrified comments about the beef hearts or tongues or whole heads of whatever at Oakton Market, I can't help but snark "How do you think they make hot dogs or bologna?"
