I've been selected to create a "sushi" roll for my magazine to represent us in some media promo sushi throwdown.
Creativity is a factor, so instead of a savory, fish roll I decided to go with a light, summery, fruity roll.
I wrote my recipe as: Julienned cucumber and mango, with lime, chili and salt, wrapped in sweet sticky rice (an homage to Sticky Rice), then rolled. Maki is topped with thin slices of cucumber and watermelon (looking like a sushi roll with tuna and avocado on top), maybe a drizzle of chili oil on top.
So this is all being held at one of the Strip sushi restaurants, and their cooks are contructing the roll. Except I learned they don't have sweet sticky rice (nor will they get any).
Would regular sushi rice work? Plain old steamed rice? Can anything be added to either to get the consistency of sticky rice?
I've been wracking my brain and I can't get past the fact that they won't get me sticky rice.
