    So I need to make a salad to accompany several preparations of foie gras, and I'm not very experienced in either salads or foie gras...any suggestions vis a vis ingredients?

    I'm thinking about making the dressing with some calvados that I happen to have, but I'm not sure about the rest of it. Fennel? I love fennel...

    I like the idea of fennel. I would think you'd want elements with strong flavors and textures to stand up to the richness of the foie gras.

    You could go with a salad of frisse, shaved fennel, and a little fruit (apple or pear?) either raw or roasted. I think the bitterness and texture of frisse with sweet fruit and a bit of shaved fennel for more depth of flavor would go nicely with foie gras.

    I second the frisee, it stands up nicely both texture and flavorwise to the foie.

    This is not really what you are looking for, but one of the best seared Foie Gras preparations I ever had served the Foie over Asian greens that had been quickly sauteed in the fat from the Foie. It was served with a sweet/salty balsamic reduction.
