Aside from a substitution for chicken in the Bayless bible, I haven't found any thoughts or recipes for Cornish game hen here. My main experience with this fowl is at Check, Please! winner [/sarcasm] Medieval Times, where it's drenched in enough butter to be moist, if not particularly flavorful.
