    Are there any places that sell bacon sliced to order, like a deli counter slices cold cuts? Where one could specify by weight or # of slices, and get it sliced to desired thickness? I haven't visted Paulina or other higher end meat markets to see whether this is something common, or have I stumbled upon something that needs to be offered and isn't...

    Paulina Meat Market sells slab bacon. They will slice it from the slab for you.

    Andy's Deli also offers this at a very reasonable price.

    My butcher slices bacon to order, but then again they hand cut all steaks to order as well.

    I would think almost any real butcher shop will slice it up for you, however, I too recommend Paulina because I know theirs to be smoked in-house.

    I'd throw Ream's Elburn Marketinto the mix. Pictured below is some of their great hickory/applewood smoked bacon, which they sell presliced or in the slab. Besides this type, they have 3 - 4 more varieties that they sell the same way. I'm sure custom cutting to any thickness you need wouldn't be a problem.

    I'll second Andy's and miss it terribly since the Division location closed. I think it was something like $3-$4/lb. It is very good.

    HarvestTime on Lawrence and Talman has Belmont Brand slab bacon in the deli case that they will slice to order. Cermack produce at Kedzie and Byron carries Boback's.
    Slab bacon is a lot more common than you would think.

    Billy's Fruit Market (400 Madison, Oak Park, at Ridgeland and Madison) has hunks of "country bacon for seasoning" coated in black pepper both behind the counter and pre-portioned in the case next to it. Great stuff.

    They also have slab bacon sliced to order, but it's rind-on. Does anyone here cook with rind-on bacon? What are favorite recipes? The fried rind turns out, not unexpectedly, like a cracklin' / deep fried pork rind stuck to your piece of bacon.

    Just about any deli will do this (except the kosher-style ones). I caution against having it sliced too thin. I bought the double-smoked bacon at Shop & Save and asked for it sliced "thin," and they sliced it almost paper-thin, so that when I cooked it, it was like bacon-flavored potato chips.

    The first time I read the title, I was amazed at the iron clad will power it would take to order a single slice of bacon.

    whole foods does this. I believe some dominicks will do bacon by the slice as well. Perfect for me as I don't have to waste plastic re-distributing a package of bacon to bags so I avoid eating a pound in a sitting.

    Marketplace on Oakton, in Skokie, right next to the Skokie Swift tracks, which are just west of Skokie Blvd....whew, yes, they have a great deli in which you can order some really nice bacon sliced to order.

    The deli at the A&G will slice slab bacon to your preferred thickness. They sell some great Polish bacons (from Andy's, I think). One (Boczek Domovy) has a black rind and is cured with caraway. It won second place in our bacon tasting from a couple of years ago.
