    I am planning a themed party. I was wondering about burritos.

    These are carne asada burritos filled also with a small slather of refried beans, some Mexican celebration rice, cilantro & chopped iceberg lettuce.
    Burritos are usually made to order on the spot by quickly heating the wrap, adding the filling and finally serving.

    My question to the group is: Can they be made ahead of time, reheated and placed in a chafer on a buffet table? Will the wraps hold up?

    My inclination is no, thinking of all the awful fast-food burritos I've eaten which clearly didn't hold up in the steam table.

    However, it sounds like you've got a wonderful burrito bar in the making there: why not put your carne and rice in chafing dishes and let your guests fill their own?

    We are already having the guests make their own tacos (pork, chicken, fish) at a taco bar. Two stations seems rather work intensive for the guests.

    Condiments for the taco bar include: crema, salsa rojo, salsa verde, grilled scallions, pico de gallo, cilantro & grilled pineapple relish. flour & corn tortillas of course.

    If you grill the outside of the burritos first, leave the lettuce and cilantro out, and leave the chafer uncovered, they should hold up fine. If you really want the cilantro flavor, chop it up finely and put it in the rice. Have fun!
