I bought some ground italian sausage, and the plan is to use it to make Freddies.

I have a question about how to cook it. After forming it into patties, can I just cook it in the oven at say 425 degrees for about 10 minutes each side (20 total)?

If I got this wrong, any other info would be appreciated.

Okay, I'll bite. What's a Freddie sandwich? A Google search didn't turn up anything definitive, and I'm guessing this isn't it.

That's Mrs. Mooney's freddie sandwich. See if you get that reference... :)
is making all his reservations under the name Steve Plotnicki from now on.

I first learned about it here too.

Damn, but Google is quick on this forum...I thought (correctly) it was a reference to the recent Broadway movie, but put that phrase in the searchbox and up pops this post!

At any rate, does it have to be cooked in the oven? I'd do it in a skillet, myself...just cook until the 'give' is where you want it to be...

You'll find more information on the Freddy here. By the way, I think Freddy is a more common spelling than Freddie.

You can cook the sausage patties however you like. Some places that serve Freddies simply fry the patties on a flat griddle. At Stefanelli & Sons (my favorite Freddy) the sausage is grilled over a gas flame. At last year's LTHForum picnic I assembled the World's Largest Freddy using Stefanelli's bulk sausage grilled over charcoal and didn't hear too many complaints. The owners of Stefanelli's prefer Damato's French loaf for their Freddies, a choice I agree with.

I made them. Trial and error on which I plan to improve, but I was kind of in a hurry tonight.
I formed a half pound of sausage into two oval patties. Because of this, they were more like burgers than the thinner Freddy (sorry for the intitial spelling error) usually is. I cooked them in the oven for about 25 minutes and they were cooked through fairly well. Very tasty.

One other thing.... I had my wife go to Caputo's today with the order to get a loaf of crusty italian bread. What did she bring home? Damatos! It was kismet!

P.S. Rene G. I grew up in Blue Island and I agree. Stefanelli's is the best. The folks who own Stefanelli's used to own Calabria, so I grew up on these!
