I enjoyed some Parmo in Dublin in 2002 and completely forgot about it, until finding this link after hopping around on some parmesan-making sites:
http://en.wikipedia.org/wiki/Parmo
This bad camera-phone pic most closely emulates what I was served, which was a pounded chicken cutlet, heavily breaded in egg, parmesan cheese, and Kiev-style coarse breadcrumbs, covered with bechamel sauce and shredded sharp cheddar, and thrown back into a brick oven for a few minutes. This unholy mess is then served in a pizza take-out box with a huge pile of fried potatoes (traditional chips at most places) and an attempt at vegetable garnish. Essentially, it's chicken/veal parmesan in a box, served as a quick junk take-out food.
We're missing this in Chicago, somehow. Any of youse sets up a Parmo shop, you let me know,
capisce?
