    I need some help!

    I picked up a couple of frozen tuna steaks from Trader Joes last week with plans to grill them today. Ordinarily, I would just coat them with sesame seeds and grill away, but these steaks are very pale -almost white. I am more accustomed to using the rare/red/fleshy tuna steaks, having never worked with these white(ish) frozen tuna cuts before.

    Any suggestions?

    I too have purchase the same tuna steaks and been mostly pleased. For the price, they aren't bad, but as with most frozen fish, they tend to be a bit watery :cry: . I would suggest that you remove it from the packaging and place it on enough paper towels to remove the excessive amount of water. While your pan, grill or broiler is heating up, mix some good quality chili powder and kosher or sea salt to make a rub. Coat the tuna and cook just a couple minutes per side over high heat. Removing the excess water will also help to avoid the steamed look to the steak, instead giving you a good crust on the outside, while keeping the inside a little rare :P . The simple rub also works on beef steaks and chicken too. Serve it up with a cilantro pesto, pumpkin seed basmati rice and some steamed snow peas and you have a great dinner. Good luck.
    Why don't people complain about the lack of meat items at vegetarian restaurants, like the vegetarians do about the lack of veg options at steak houses?
