    I am looking to find some real Bavarian Weisswurst, which is veal based somewhere in the Chicagoland area. Since Meyer's butcher shop closed haven't found the real deal.

    The weisswurst at Paulina Market are fantastic: mild and savory, with a counterpoint of spice in the background. And all of the accompaniments from German mustards to imported breads are right there.

    If you go on a Friday, be sure to try the veal muffins.

    The only people I know whose sausages come close to Meyer's are Paulina Meat Market. As a lover of the veal weisswurst I heartily second the above rec.

    You might try The Wurst Kitchen in Aurora, they have been around 100 yers or so and make a huge array of sausages and will make to order.

    So as someone who grew up in Munich... the weisswurst at Paulina's are very good - but not quite there.

    Now - I love Paulina's, and I love that I can get german cuts, such as Kassler, and good sausage. Their weisswurst is the closest I've found here in Chicago, and it's very good - but not quite right. The casing is not snappy enough, and the filling doesn't have quite the right blend, and they are a little small.

    But - I still buy them anyway, since I can't get home as often as I'd like.

    I had been purchasing the veal weisswurst from Deli Meyer for my 86 year old German mother, and was so disappointed when they closed. I have yet to find a source for the all veal weisswurst. I am even willing to make my own. Does anyone have a recipe that I can try, or a new source to buy?

    Mmmmmm.....Veal Muffin. The first time I bought one I thought it had dough or something in it - I was very pleasantly surprised when I bit into it.
