I am having a party with 25 adults and 10 kids under 11. I want to make Polish sausage and cut it into maybe 3 inch chunks to serve with rolls and rye bread. There will be a jello dish, green salad, pasta salad, najifka, and maybe egg noodles.
So how many pounds will I need? I have never made sausage for a crowd. Any advice would help!

For Polish, I would bet you are getting about 15-18 inches of sausage to a pound, so that's 5-6 (3 inch) sandwiches per pound. Assuming the average adult would eat two and the average child would eat one (which seems reasonable to me if you have a bunch of side dishes as well, but really depends on the appetites of your crowd, ages of the kids, etc.), you would need just over 60 sandwiches. So ten to twelve pounds of sausage? Personally, I would buffer that with an extra couple of pounds (and probably go 15 pounds total), but I tend to err on the high end -- as having leftovers is obviously much better than running out of food.

Speaking of Polish sausage, Rich's Deli carries several varieties - too many for me to remember right now. Which ones do you recommend?
