    Hi,

    I received a phone call today from someone who works east of the loop who is looking for a deep dish pie pan.

    While any information on where a deep dish pie pan can be located is appreciated. If it happens to be west of loop or in the Downer's Grove area, then all the better.

    Does anyone have a sense of how deep is a deep pie dish? From a cursory look, I see pans 1.75 to 2.25 inches deep. Does that sound right?

    Restaurant Depot has deep dish pie pans and all the other accoutrement (grabbers, spatulas, etc.) required for making the deep dish pie. You need to be in the business and have a membership (free if you qualify) to enter the building.

    If you or your friend do not meet these qualifications, I would be happy to help you out. Contact me with a PM and we can arrange a time to meet and visit Restaurant Depot. There is one in Des Plaines, on Mannheim, between Howard and Touhy, not far from the Touhy exit off of I-294. They are open seven days a week from very early in the morning. If you want to go with me, it will be closer to mid-morning as I will be carefully observing the inside of my eyelids prior to that time.

    new one in Lombard just opened at Rohlwing and North Avenue which is a little closer to Downers.
    really nice place and a lot cleaner and open than Des Plaines location.
    If your friend doesnt mind getting up early on a sat or sunday when I usually go there I could meet as well but again i like to get there when they open

    Last time I was at Herzog, a restaurant supply store, they had a lot of pizza-makinig equipment (it's just west of the loop).

    Instead of going new, I bought a "previously used/seasoned" pan at Lou Malnati's. Great pan. My only regret is the size - I should've opted for the medium size vs. the large. I think they charged me $20 for the pan.

    Are we talking deep-dish pie pan or deep-dish pizza pan? I have a deep-dish pie pan I found at a thrift store; it's about 3" deep and maybe 6" at the base. I'd always assumed you could use a cake pan (and I do) to make deep-dish pizza.

    Hi,

    I will admit I was thinking deep dish as in deep dish apple pie, however it may be it is the pizza. I don't know, I only have a voicemail message to refer to.

    In reading around, I did find suggestions of using a cast iron pan for a deep dish pan.

    If there are any other ideas on deep dish (apple) pie pans, then please advise. I admit I get most of my pie pans, especially those I give away, via rummage sales.

    I'm sure I've seen the Pyrex brand ones at the fancy Dominicks' stores.

    My deep-dish pie pan is from the Pampered Chef (it's stone). I thought they used to have an outlet store somewhere in the W. burbs, but I'm having a hard time finding anything about it online quickly. Their corporate offices are in Addison.

    Sorry, this is my fault. I jumped the gun, assuming, based on my personal bias, that you meant a deep dish pizza pan. Upon careful reading of your initial post and the responses of others, I see my potential error.

    My answer, however, remains the same. Restaurant Depot has a wide selection of commercial baking supplies that would be helpful to your friend.
