    Now that I've geared up to try and make some pork belly (adobo style?) I can't find any. One problem, probably, is that I'm in Algonquin, not the city.

    So--any idea where to get a 2lb or so piece/package of pork belly out this way? I've tried: Woodmans, Caputos, Butcher on the Block and Miejer...

    About the closest I might suggest is Asia Supermarket in Schaumburg on Golf Road. Call first to make sure they have it, but I've always been able to buy nice pieces of pork belly at the Asia Supermarket in Naperville. They sell in large pieces and not slices. You might also try aksing for a special order from Caputos.

    Give Woodman's another try and ask to speak with Josh or Jim in the Meat dept. They may be able to special order it for you. If all else fails you may want call Dreymiller & Kray in Hampshire to see if they have any pork belly.

    Ok thanks-- Im a regular shopper at Woodmans--did see the salted pork belly and asked someone ( a kid) in the meat dept if that was what I was looking for--somehow I didnt think so. He did go in back and ask around and finally came out and said no that wasnt it, and they dont have it. Will have to call and talk to one of those 2 guys. The guy at Butcher on the Block said he could order it--but it comes in chunks, the smallest of which is about 12 pounds!!! So, that is a no go.

    Butcher on the Block looks interesting from the website. Algonquin used to have an old-school butcher shop, Vito Buffalo's Main Street Market, which was right downtown. It's been gone at least 20 years.

    I thought about that as I was thinking of where to go- but yeah, that butcher shop has been gone a long time. I have a feeling I'll have to go to an Asian or Hispanic market somewhere....

    I have purchased it a Valli produce in Schaumburg in the past. I also use to get it regularly at the Generic Grocery Store (The name escapes me) on 14 in Crystal lake by the excellent Pinemoor Pizza‎.

    Are you talking about Joseph's Marketplace in Crystal Lake which may carry what the OP is looking for? Call first.

    Exactly what is generic about it?

    Its Generic that its not one of the large Chain stores, when I use to live in CL I always shopped there.

    Ok so I called Josephs in Crystal Lake and they said they had it. So I went on up and checked the pork section--no belly! They do have every meat known to man --whole veal tongue anyone? I asked at the counter, and it was the guys who had spoken to me on the phone earlier. One of them went in back and cut me some. Took 2 pkgs each with about 1 3/4 pounds--which was 4 strips -each about 6-8 inches long and 1 1/2 inches wide in each package. Put one in freezer for a rainy day.

    Now I'm going to try to cook the one package, 2 different ways. I got the original recipe I was going to try from a workmate--basically an adobo (?)-- water, soy sauce, apple cider vinegar, bay leaf, garlic, and brown sugar. I decided to fry the skins to crackle them, which didnt take long, now I am stove top cooking the pieces ( I cut them into cubes ) on a super low heat for about 90 minutes in that marinade. The other half of the package I scored, rubbed with salt/pepper, ran thru the same marinade, but am letting sit for about 30 minutes. Then I'll high heat roast for about half hour to cook the skin nice, then slow cook for another hour. In other words, I have no idea what I'm doing, but we shall see!

    Joseph's also sells pancetta which is smoked pork belly.

    BTW, it always pays to ask for what you don't see at Joseph's. A lot of times, they can get it.

    So I cooked up the two kinds and both are good. Slightly more flavorful and tender in the stovetop adobo method. I crisped the skin in pan first for a bit, but that didn't translate thru that much. The oven roasting was good too-probably better to flavor it with a rub or different marinade first- tasted roast-y but not super flavorful. Maybe another half hour in oven would have helped also, but both versions were quite tender. All in all, a good first attempt.
