    During a recent trip to Edinburgh, I had the unbelievable fortune to have rented a flat near a Crombie's shop: http://www.sausages.co.uk/. I had never had emulsified sausages before, and now I crave them.

    Even if I could have left all my clothes behind and stuffed my suitcase full of sausages, they would be gone by now. So my question is, does anyone know of a place similar to this in the Chicagoland area? Or, perhaps even Eastern Michigan?

    Hot dogs and bologna are technically emulsified sausages ;)

    I did a bit of googling, looks like Crombie's does mail order but I couldn't find the right page. However, if you described the sausages a bit more clearly, someone might be able to point you in a direction that may suit you. All I found online was "smoky pork and beef."

    You might also try talking to Hot Doug - most of the sausages he uses are pretty emulsified.

    HI,

    You may need to check out Ream's Elburn Market who does have an emulsifier for preparing sausages. They make quite a range of sausages with a number recognizable to Europeans. Whether it is what you are thinking about, I am not quite sure.
