    With the upcoming three day weekend, I thought I'd so some playing with a makeshift anti-griddle...

    Anyone have any tried and true recipes that they know of? I have the Alinea book and will be planning to try a few things... but other suggestions are welcome!

    Probably the easiest way would be to get a block of dry ice and put a sheet pan on top of it.

    I'll second that. The bottom of an ice cream maker bowl isn't cutting it for me.

    Dry ice and a cookie sheet indeed. ;)

    Alinea at Home is one of the blog sites in my foodie feeds, and her recent experiment with some of Alinea's recipes has shown that using her countertop, followed by a towel, dry ice, then a cookie sheet on top can reproduce the effects of an anti-griddle...

    I'll be using a laser read to determine what the temperature of the surface actually is, since I believe the temperature of dry ice much lower than -40 degrees of the anti-griddle.

    Also, if anyone has any good sous vide recipes, this will be an experimentation weekend for me...
