This will not help most of the readers of this Forum but if you are serious about your lobster rolls and travel, the Sendick's in Mequon Wisconsin makes an awesome whole wheat hot dog bun that is great for a lobster roll.
I stumbled on these when needing lobster rolls and the Sendick's only had these whole wheat buns that are made in the store.
They are not sliced and have enough body that one doesn't require the traditional cardboard sleeve to hold the lobster.
A stiff hot dog holds any soft floppy hot dog bun together but with chopped lobster, that support is not present.
I can then slice partially from the top, toast in butter and then fill with lobster.
I use fresh shucked Maine lobster, diced celery and Kewpie (yes, I know it;s got MSG!) (Japanese mayo).
The taste of Kewpie simply can't be beat!
H-Mart had lobster for $6.98/# Sunday which is good and bad.
softer shell, easier to shuck but less meat.
Boil for 12 minutes, chill in cold water, shuck, reserving the knuckle meat, inner liquid, interior body after gill removal and tomalley for a lobster stew I will make tonight.
I reserve a whole claw for each roll which is put on top of the filled bun for presentation.
I call ahead and order the whole wheat hot dog buns. they do not come sliced.-Richard
