Does any one know of any butchering classes available within the City? I've looked at the different culinary schools, CHIC, Art Institute, Butchering Block, but haven't found a class dedicated to butchering whole animals. Plus, i'm not interested in a culinary program, just learning how to butcher. Or does anyone know of a butcher that might be interested in an apprentice to work a few hours a week for free?
