    I have been assigned the position of head chef for cooking for a group of 16 foodies over Labor Day weekend at a friend's cabin. I was brainstorming menu/theme ideas and thought it would be fun to do a menu based on the basics that would normally be eaten at a cabin (burgers, hot dogs, s'mores, etc) but taken to a gourmet level. One idea I have is to make homemade marshmallows and some sort of shortbread for homemade gourmet s'mores. Does anyone have any other suggestions or recipes? Remember this is for a large group, so some ideas might not be practical. Thanks in advance.

    Will you have an open fire? How about grilling fava beans and creating a dressing with pomegranate molasses to make upscale baked beans?

    I found some ideas for gourmet camp food here. I plan to try the baked brie (brilliant!) and the strawberry-shortcake-on-a-stick on our next camping trip. There's also a write-up of a gourmet hot-dog-competition here that might give you some ideas.

    Check out Nancy Silverton's recipe for homemade graham crackers. I got the idea from someone on LTH (sorry whoever I'm not crediting directly) and made s'mores with homemade marshmallows, grahams and really good bittersweet chocolate with almonds. The homemade marshmallows didn't hold up to the heat that well but the s'mores were delicious. You could also look up the Hot Doug's threads for interesting 'encased meat' ideas. Like substituting Merguez or Andouille sausage and fitting toppings for hot dogs...

    Thanks for the ideas. I think I have figured out the menu and it will be:

    Chips and dip (Crab and smoked gouda dip with artichoke leaves as the chips)

    Hamburgers (Wagyu beef and andouille sausage with pecans, pickled okra, watercress and blue cheese with spicy mayo)

    Potato salad (Grilled sweet potatos with poblanos and green onions in a honey vinaigerette)

    Coleslaw (Spicy pineapple leek ginger slaw)

    S'mores (homemade graham crackers and homemade marshmallows with dark chocolate and chopped almonds)
