Post #1 - August 14th, 2009, 9:39 amI just tried the Cabot Clothbound and it's head & shoulders above any cheddar i've tried. Much better than the dry jack's I've tried and very similar to Reggiano. Very complex with a great texture. Also about $22/lb. Ouch. But truly great.
