    I've noticed there isn't much information regarding the availability or where to even get fresh Huitlacoche.

    My father has a farm in Indiana and he is always complaining about all the "corn smut" he gets every year on his ears of sweet corn and popping corn.

    I'm just posting this up so if anyone is interested in obtaining some of the fresh stuff, I'm pretty sure I can get him to ship some out.

    Apparently, there isn't much interest in Mexican Corn Truffles in the Midwest (no matter how you market them) and I know he'd hate for all that corn to go to waste.

    Just thought I'd throw that out there :)

    I spoke to Henry from Henry's Farm at the Evanston Farmers' Market last week; he said the huitlacoche he has sells out quickly - usually by 9 or 9:30 am. There's a definite market for it here in the Midwest.

    That's good to know. My father actually lives in a much more rural area, so I guess that's what I meant. Of course, in a city like Chicago (or New York or Los Angeles, etc.) there will be a market for that sort of thing. I can't really see my father driving the 3 hours it would take to get to Evanston though (in his old Ford). I was thinking more like FedEx!

    Would your father be willing to drive to NW Indiana...say, Munster or Valparaiso? Or perhaps a south Cook County suburb like Flossmoor?

    It might take until noon, but he would sell out in those locations as well. And even sooner if you let people here know where your father was selling the huitlacoche...

    I really appreciate the very solid ideas that folks are tossing out here. I know that has sold at farmer's markets as far as Muncie and that he would probably be willing to travel to Ft. Wayne, but since he lives in eastern rural Indiana (nowheresville) a round-trip to any of those places might be over 5 hours. I would talk to him about it, but I have no idea what that stuff goes for in those areas, so I don't know if it would be a financially viable thing for him to do. He's very busy this time of year as it is.

    btw, how would he let people know what he was selling ahead of time? Is there a website or something the farmer's markets in your area?

    Corn Smut? You're eating corn smut? :| I put myself through college working the corn pack at Delmonte. I can't begin to tell you how much corn smut I chopped off corn. Maybe you should shoot an email to Delmonte and let them know that there is a market for corn smut. Amazing!

    FYI, Three Sisters at the Green City Market sells Huitlacoche from time to time. We bought it at the winter market several months back and made some huitlacoche tacos, which were delish.
