    Try hunting around some sweet corn fields. It's too late in the year to find in feed corn. It is more abundant in wet weather which we have not had.

    Try Henry's Farm. He usually has some at the Evanston Farmers' Market, but it sells out early.

    Been involved in a farm to taco stand that wants to keep doing corn smut in the off season. Extramsg suggests Ya Esta brand huitlacoche in a jar as being a good alternative. Spent 3 hrs searching for it today and can't find it anywhere in Chi or on the internet. While he checks w/his distributor, anyone know where to get some?

    When the weather's been rainy, Henry's Farm has had some at the Evanston Farmers' Market. Obviously you couldn't count on that year-round, but I think huitlacoche freezes pretty well, and I imagine the frozen would be a little better than the canned.

    Although Salpicon has often had huitlacoche on their menu, I can't recall if they've had it outside the regular corn season. But you may wish to inquire about their sources.

    Goya brand canned huitlacoche and other brands are available on Amazon.

    Hi,

    Huitlacoche is grown as a crop in Florida. Whoever it is, sells frozen huitlacoche, because I once bought some along with a few others via Culinary Historians some years ago.

    Hi- The last email I got from Henry a week ago, said that last Saturday was going to be the last of his corn. You never know with him though, and sometimes he says this is it, and then he will have it again the following week. I don't know of anyone else that sells corn smut at Evanston.

    Cremería La Ordeña is always worth checking for less common Mexican ingredients. It's the only place I recall seeing jarred huitlacoche recently (canned seems more common).

    The jars have the La Ordeña label but I wouldn't be surprised if what's inside is quite similar to Ya Está brand. The ingredients (and their order) are identical: huitlacoche, cebolla, grano de elote, aceite vegetal, agua, sal, ácido cítrico y benzoato de sodio.

    How much did it cost? I have saw it sold before the the fungi clinging to the corn on purpose.

    They were $7 each. Each ear was hefty, but without buying one I couldn't tell how much of the goods there are on each ear.
