Reading jimswside's post about his carnitas reminded me about this find in Villa Park. Going to Manny's (Big or Tall - We fit them all) a couple of weeks ago, I saw this little Mexican grocery store and having time to kill, went in to find some hot sauce. Along with a good selection of sauces and peppers, I noticed the carnitas next to the butcher counter. I've always wanted to make some as a change of pace from pulled pork but I never wanted to go thru the hassle of deep frying in lard. Fortunately for me, La Rosita had a large heated display of the most wonderful pork that I have seen in a long time. It looked like they used either a whole shoulder or a large picnic as they had all that glorious skin mixed in with the meat. All of this wonderful pork goodness and only $4.69 a pound! I picked up a pound and make some of the most wonderful tacos you could imagine. Moist, succulent pork with a hint of citrus sent me into pork heaven. Pretty rich and certainly not heart-healthy but well worth it.
If you're in the neighborhood check it out (and stop in and buy a sport coat from Manny - he still working and his store is one of a kind).
