My local markets in Atlanta seem to be overrun with Buddha's Hand of late. They're not cheap at 5 bucks a pop. Before I delve into them, I wanted to see if the always knowledgeable and experienced LTH Family had any tried and true recipes for the squiddy looking citrus fruit.

I like to cut across the bias creating "flowerets" which I then candy in sugar, pink peppercorn, and aleppo pepper. I also infuse vodka with "goblin fingers." It's synergistic with lemongrass in a simple stirfry; I've got some chopped in the freezer just for this purpose, as well as an abundance of homegrown lemongrass.

I've never used it myself, but on cooking shows (such as Iron Chef) I usually only see the zest grated.

Sounds like this ice cream would be delightful.

Thanks for the ideas. Both the ice cream and candied Buddha's Hand sound like a good use of it.

Apparently, not a lot of other people have any idea either. In my local Fresh Market, I noticed yesterday that the Buddha's Hand were pretty much turning to mush out of sheer disinterest from shoppers.

A few years ago, I recall seeing some PBS cooking show where the host/chef had a Buddha's hand plant/tree in his back yard. He made some sort of soup of it. But, that's about as far as my memory goes on it.

    In salads? Jam (or jelly)?
