    I've been eyeballing the plethora of greens H-Mart carries for quite sometime. I rarely swerve from my usual baby bokchoy, maybe some korean chives, maybe chinese radish, some lemongrass.

    I have short term goal of adding way more veggies into meals and would like to cook up the 40 plus product selection of straight up fresh cut dark green leafy veggies I'm seeing.

    Would the best way to do it, to go to H-mart, write down the names of each one then go home and google each one for recipes? Or does anyone have a resource of say..."how to cook and prepare every Asian veggie under the sun"?

    I have a book I've worked my way through that has a thorough description of how to use all kinds of Asian vegetables, Kenji - just LMK how to get it to you. The best suggestion I got from there was Stem Lettuce (also called Asparagus lettuce) which melts right into stir-fries. Also worth knowing that Choy Sum or Yu Choy (you'll know it from the yellow flowers) is what Lao Sze Chuan uses for pot herb with pork, which I've successfully duplicated at home (also worth noting that it's the plant that produces canola oil.)

    Saveur has a good description of the basics here.

    There's also Gai Lan, which you can cook like any other broccoli, but you eat the leaves, too - Mustard Cabbage is another fleshy vegetable, and Amaranth, or Callaloo can be made into the traditional soup as well as stir-fried.

    The book has quite a few more, which I've tried and enjoyed, but this should give you a good start.

    Beyond Bok Choy I admit, I didn't find the specific recipes all that useful -but the photos, descriptions, and suggestions were very, very helpful. It offers more than just greens, there's a section of fruiting vegetables, roots, and herbs as well.

    My suggestion, with apologies to the author - don't buy the book - get it at the library. It's good to take a thorough look at, but once you've figured the stuff out, you won't need it anymore.

    I'd love to take a peek at it for a little while if I could.

    I could even buy lunch. Just so you know, because we've never met, I'm safe and sane and not an axe murderer, ask Gary. He and I have dined a few times together. :)

    I'm pretty sure there is a pig or two out there who considers Gary to be an axe murderer, in which case we've both dined with one... :wink:
