Hello all,
I was wondering if someone could help me out as regards to pickling Okra. I am on my first attempt and just finished the 10 minute bath in boiling water. When I pulled my jars out of the bath, I noticed that there is quite a bit more of head space than I accounted for and some of the okra is not submerged in the liquid. I filled the jars completely before I put them in the bath. Also, I know I put the lids on tight enough, but what I think I did not account for was the okra to absorb so much of the liquid. So my question is, is my batch ruined because some of the okra is floating out of the liquid?
Any help would be greatly appreciated!
