    This week I was in St. Louis for Thanksgiving and stopped into Salume Beddu, a small shop where they cure their own meats and have a variety of cheese, dried pastas, and other delicious things. It was hard to pick, but we decided to take home, besides meats, some bacon tomato marmalade. I was thinking of putting it over polenta, but when we got it home and tasted it I found that it's sweeter than I thought it would be. It almost tastes like barbecue sauce. Still yummy, but not quite what I was expecting. I was thinking of putting it on crostini (as the owner of the store originally suggested) but I feel like it will need some kind of cheese or veggie with it to cut the sweetness. Any suggestions? Or other ways to prepare it?

    Why not make a chicken wrap with lettuce and shredded cheese and maybe other veggies and put the marmalade on that?

    Ooh, that sounds excellent. I think we'll have to try it. Plus that sounds great for a quick dinner or lunch.

    i'd suggest trying it on a grilled cheese sandwich. justjoan

    If you want to kind of get rid of it without wasting the flavor, add it to meat loaf or baste meatloaf with it.

    We tried the marmalade with grilled cheese last night, and it was delicious. I like a combination of fontina for meltiness and cheddar for flavor. It turned out that there were pretty good sized pieces of tomatoes throughout the marmalade, so that made it even better, since I like even plain tomatoes on my grilled cheese. So good I'm making it again tonight :)
