    Can't find them. Tried A &G on Belmont. Nope. H Mart in Niles. Nope.

    I am trying to make duck sausage and I am told stew ducks hold up better, cheaper and taste better. So, where do I get my hands on a fine old duck?

    There's no market for them whatsoever. Heck, there's barely a market for ducklings!

    I'd try calling a poultry farm, or one of the live poultry stores listed in ths Steve Dolinsky piece. I think you're going to have tough sledding, though. I'd just use duck legs were I you.

    That's $2.69 per pound, right?

    If you want somewhat-local tough ducks that haven't been frozen—heck, not even refrigerated—the live poultry places should be able to accommodate (sometimes requiring advance notice). You might have to pay a premium for the oldsters though. Certainly that's the case at John's Live Poultry on Fullerton. It's the duck version of the hard chicken paradox (see Hard Chickens in a Chicago Landmark, something I posted here almost a decade ago).

    $2.69 or real close to that price.
    Remember the price at a live poultry market is live wieght.

    I have secured a stew duck per your suggestion. Thank you.

    Now I just have to figure out my spice kit. I figure salt, pepper, sage, nutmeg. I am going to poke around.
